Biennale (Immune boosting) Soup

I’ve just returned from a trip to Venice to see the Art Biennale. The only thing I brought back was a terrible cold and sore throat 🥺. I think that it could have had something to do with my clothing choices, as I dressed for summer when in April it is mostly cold with showers. In Venice, I think it is always damp when the sun doesn’t shine and it didn’t shine much last week. ☀️

Anyway, it was a great trip with some of my best friends but now I’m home and sick so here is a recipe I made up and ate today to try and improve my symptoms. It was delicious.

Immune-Boosting Vegetable Soup Recipe

Ingredients:

- 3 sticks of celery, chopped

- 1 red onion, chopped

- 4 carrots, chopped

- 1 whole beetroot, chopped

- 3 cloves of garlic, minced

- 1-inch cube of ginger, minced

- Vegetable stock

- Water

- 1 tablespoon olive oil

Instructions:

1. Heat olive oil in a large pot over low heat.

2. Add chopped celery, red onion, carrots, beetroot, minced garlic, and ginger to the pot. Sweat the vegetables, stirring occasionally, for about 20 minutes until they begin to soften and release their aromas.

3. Once the vegetables are slightly softened, add enough water to cover them along with vegetable stock for added flavor.

4. Bring the soup to a simmer and let it cook for another 20-30 minutes, or until all the vegetables are tender.

5. Season with salt and pepper to taste, and adjust the consistency by adding more water if needed.
